KyongHo Choi Wins S.Pellegrino Young Chef Pacific Regional Final

Rising star KyongHo (Daniel) Choi has taken home the top prize at the S.Pellegrino Young Chef Academy Pacific Regional Final for 2024-25. Competing against nine other talented chefs at Crown College, Choi’s inventive dish, inspired by his Korean-Irish heritage, earned him a spot at the Grand Finale in Milan next year.

A Fusion of Flavours and Heritage

Choi’s signature dish, "Bacon and Cabbage or Pork and Kimchi," showcased a unique blend of Korean and Irish influences. This fusion of flavours caught the attention of the esteemed panel of judges, featuring some of the most respected names in Australian hospitality. Despite this being his first competition, Choi’s calm focus in the kitchen led to his standout win.

"I’m honoured to have cooked for such a respected panel," said Choi. "Competing alongside such talented chefs was an incredible experience, and I’m proud to have won. Now, I’m looking forward to preparing for Milan with the support of Josh Niland."

Preparing for the Grand Finale

Choi will now head to Milan in 2025 to represent the Pacific region. Along the way, he’ll be mentored by renowned chef Josh Niland, known for his groundbreaking approach to seafood at Saint Peter and Fish Butchery. Niland will help Choi further develop his skills and fine-tune his winning dish in preparation for the global competition.

Other Awards on the Day

In addition to Choi’s win, three other young chefs were recognised at the event with awards for their innovative dishes. New Zealand’s Joshua Ross received two honours, the S.Pellegrino Social Responsibility Award and the Acqua Panna Connection in Gastronomy Award, for his dish featuring wild venison and smoked deer milk purée. Siriporn Boonsin from NSW took home the Fine Dining Lovers Food for Thought Award for her "Assiette from the Sea."

The day culminated in a gala dinner at The Lume, where Australia’s hospitality industry came together to celebrate emerging talent.
