Cheese, but make it chic. Fondue Chalet has officially set up camp at Fed Square, and Melbourne, we’re in our gooey, wine-sipping, marshmallow-roasting era. This is not a drill. It’s a whole private-chalet, snow-machine, imported-French-cheese situation—and it’s already got locals lining up like it’s Black Friday at Laurent.

Brought to us by the fromage fanatics behind last year’s Raclette Igloo Experience, this six-week winter pop-up is a full-blown French fantasy—minus the jetlag and with significantly more puffer jackets. Think: your own wooden chalet for you and five to seven fellow fondue fiends, a fire pit that’s not just for show, and cheese so stringy it should come with a warning label.

Upon arrival, you’re greeted with a steaming cup of mulled wine (nature’s puffer vest), then whisked away into a candlelit timber cabin where a French waiter ushers in a bubbling pot of fondue so rich it probably owns an apartment in the 6th arrondissement. The recipe? A dreamy melt of Comté, Beaufort, Emmental and Vacherin, blended with white wine and kirsch, served with crusty bread, charcuterie, and a knowing smile.

The vibe is alpine chalet meets inner-city chic: it’s snowing (thanks to very committed snow machines), the air smells like cheese and cinnamon, and couples are feeding each other baguette like it's an ad for European travel insurance. Outside, you can toast marshmallows by the fire, sip another drink, and pretend you just skied down Collins Street.

And if you’ve still got room, there’s the $109 chocolate fondue option, featuring molten Belgian chocolate and sweet things to dip into it. Frankly, if you’re not dipping strawberries in hot chocolate by 9pm, what are you doing with your winter?

And then there’s the Après-Ski Bar—exclusively for fondue-goers—where you can lounge fireside, knock back a French cocktail or a digestif (that’s post-fondue liqueur, for the uninitiated), and process everything you just dipped.

Fondue Chalet runs until 22 June 2025 and it's already become the city’s hottest winter ticket (ironic, given it’s literally snowing). Bookings are a must, chalets seat 6–8, and kids under six eat free. Because fromage is for everyone.
