Fancy Hank’s Fires Up Free Sandwiches for International Brisket Day

On Wednesday 28 May, Fancy Hank’s is giving away their signature smoked brisket sandwiches from 12pm until sold out, in celebration of International Brisket Day. No gimmicks, no spend required—just proper low-and-slow barbecue handed over for nothing more than showing up on time.
In true Fancy Hank’s style, the sandwich is a hefty pile of 12-hour smoked ‘Wanderer’ Angus brisket—deeply seasoned, oak-smoked, and carved thick—tucked into a soft Martin’s potato roll. It comes with a drink voucher to redeem next door at Springrock Public Bar, and for $5, you can throw in a side of golden chicken salt fries too.
Co-owner Mike Patrick sees it as more than a promotion—it’s a thank you to the regulars who’ve helped them smoke brisket, non-stop, for 13 years. “This is what we do. The smoker’s always on. The technique’s been honed over years. It’s about consistency, sourcing the right beef, and putting in the time to do it properly.”
Head chef Jarrod Di Blasi adds, “Brisket takes patience. There’s no faking it. We source from a trusted local producer, season it generously, and let the smoker do the rest. The reward is in the flavour—and when it’s right, nothing comes close.”

And if you miss out? You won’t have to wait long for redemption. Starting 2 June, Fancy Hank’s launches Bottomless Barbecue—running Monday to Wednesday nights from 5pm. For $69 a head, guests can settle into a never-ending spread of brisket, pulled pork, smoked chicken thighs, buffalo wings and sides, all topped up straight from the pit.
