Led by executive chef Jacob Young, the culinary team at Amazon State has assembled some of the best talents from Melbourne's dining scene, including Chef Patrick Howard and Venue Manager Tracy Te Anini. The menu is focused on small sharing plates that feature seasonal fresh recipes and dry-aged meats, handmade pasta, fresh lobster, and caviar bumps cooked to perfection in a Josper Charcoal Oven.
The venue's name, Amazon State, references exploring the Amazon and experiencing an epic food journey. Each of the three levels features a unique experience, starting with the basement oyster bar, where diners can enjoy freshly shucked oysters, a range of over 100 Italian and local wines, and freshly sliced salumi from the in-house charcuterie machine.
On the ground floor, the Italian Trattoria features handmade fresh pasta, dry-aged meats, fresh daily bread, and the same range of wines as the basement. The venue's manager, Akin Celik, explains that while the beautiful historic facade remains, the interior has been refitted with fresh decor, fittings, and booths. The below-ground cellar room, originally the Undertaker's morgue, is open to the public for the first time in years, providing a unique dining experience.
