Experience Edomae Sushi with Chef Norihito Endo at Ishizuka

In December, Ishizuka, one of Melbourne's top fine-dining establishments, will host an exclusive event featuring renowned sushi artisan, Chef Norihito Endo of Tokyo's Ebisu Endo. For three nights only, diners can experience Edomae-style sushi crafted with traditional mastery and a creative edge.

From December 5th to 7th, Chef Endo, trained under Takashi Saito of the three-Michelin-starred Sushi Saito, will bring his expertise to Melbourne. His work goes beyond culinary technique, focusing on every detail of the dining experience, from utensils to ingredient selection, ensuring an immersive experience.

Chef Endo has gained international acclaim, with residencies in Norway, the United States, and now Australia. His use of local ingredients ensures each omakase remains unique. Typically, securing a reservation at his Tokyo establishment requires significant planning, but this event offers a rare opportunity for local diners.

Endo's approach to sushi emphasizes precision, tradition, and innovation. His focus on freshness and balance creates a multi-dimensional sensory experience. Each course showcases the artistry of sushi, honoring Edomae sushi's history while evolving in a modern context.

Ishizuka, recognized with two Chef Hats, is celebrated for its intimate 16-seat subterranean dining room. The setting enhances the connection between chefs and guests, allowing patrons to fully appreciate each course. The serene, minimalist atmosphere adds to the exclusivity of the experience.

Chef Endo will collaborate with Ishizuka's Executive Chef, Katsuji Yoshino, to present a 17-course tasting menu: 12 of Endo's signature sushi courses paired with five kaiseki dishes by Yoshino. This collaboration promises a balance of tradition and innovation, emphasizing pure flavors and quality ingredients.

Founder Melanie Zhang describes Chef Endo's visit as a "once-in-a-lifetime experience." She views this as a chance to introduce exceptional sushi craftsmanship and deepen appreciation for Japanese cuisine's cultural dimensions. The event celebrates more than technical skill; it honors the cultural narratives behind each dish.

The event is priced at $550 per person, with optional drink pairings available. These pairings are curated to complement the subtleties of each course, highlighting both traditional and modern influences.

Due to limited seating, reservations are expected to fill quickly. For those attending, this promises to be an evening of extraordinary craftsmanship. Reservations can be made via Ishizuka's website, but availability will diminish swiftly. Chef Endo's expertise paired with Ishizuka's acclaimed setting ensures a profound culinary journey celebrating Japanese gastronomy.
