My evening at Bansho began with a Sakura Martini, a prelude to the symphony of flavours to come. The appetisers set the stage high — mushrooms with truffle oil on a cloud of cracker, a Wagyu beef skewer that perfectly harmonised garlic, soy, and pickled wasabi, and a beef croquette accompanied by garlic sour cream, showcasing a level of finesse reminiscent of a kare-pan but elevated.
The journey continued with the Chawanmushi, a testament to the subtlety and depth of flavor achievable in this culinary crossroads. It was followed by the Poisson du Jour, a dish that encapsulated umami, perfectly paired with crispy Brussels sprouts. The meal concluded on a high note with a Choux au Craquelin filled with matcha cream, a dessert that lingered on the palate long after the evening had ended.
Bansho's allure extends beyond its menu. The venue, conceptualized by Larry Xie and Mira Wu, marries a sleek geometric art deco design with the warmth of leather chairs, wooden tables, and velvet banquettes.
