Aurum Poultry Co. has joined forces with Melbourne’s charcuterie artisans, City Larder, to release a refined selection of poultry-based delicacies, each crafted with an eye for quality and depth. This new range—a rich cockerel liver pâté, a terrine blending cockerel with duck and chives, and a robust, double-cooked cockerel stock—celebrates Aurum’s standout ingredient: the Fook Wong Cockerel, a young rooster raised in small batches on Victorian farms.

The Fook Wong Cockerel is at the heart of this collaboration. Unlike standard poultry, this bird is raised over a leisurely 100 days to develop a unique flavour and firmer texture. The result is a distinctive, layered taste—rich, earthy, and elegantly robust. Aurum’s focus on slow-growing practices shines here, allowing the bird’s natural qualities to come forward, setting the stage for each of the three new products.

  6. Crafted with patience, this stock is slow-cooked over nine hours without additives or preservatives, bringing a depth rarely found in commercially available broths. The cockerel double stock (500mL at $8.90, 1L at $15.90) serves as a rich foundation for soups, congee, or hot pot, delivering a layered, long-simmered flavour that’s hearty yet balanced. Each sip speaks of time and careful attention to ingredients.
